The Accidental Dish: Kadhi Chawal, prepared by Lakshita Baid

Food often reflects creativity during times of scarcity. One such example is Kadhi Chawal, asimple yogurt-based curry served with rice that is now widely loved across North India.

According to a popular Rajasthani folk story, the dish originated when a woman was preparing food for her husband working in the fields. She had planned to take him cool yogurt rabri, but when she opened the pot, she realized that the intense heat had made the yogurt completely sour. With no time or ingredients to cook something new, she decided to experiment.

She mixed a few handfuls of gram flour (besan) into the sour yogurt and whisked it well. The mixture was then placed on a clay stove to boil while she stirred it carefully to avoid lumps. She added turmeric and red chili powder, and soon the mixture began releasing a rich aroma. To enhance the flavor, she prepared a tempering of ghee, cumin seeds, and dried red chilies and poured it into the simmering curry.

Since there was no time to make fresh bread and there was no flour left at home, she served the curry with leftover boiled rice from the previous day. When her husband tasted it, he loved it and said it was even better than the yogurt rabri she had originally planned. From this simple accident came the beloved dish Kadhi Chawal.

Authentic Recipe

 

Ingredients

● 2 cups sour yogurt

● 2 tbsp gram flour (besan)

● 2 cups water

● ½ tsp turmeric powder

● 1 tsp red chili powder

● Salt to taste

● 1 Tablespoon ghee

● 1 teaspoon cumin seeds

● 2 dried red chilies

Substitutes

● Sour Yogurt – Buttermilk

● Gram Flour (Besan) – chickpea flour or rice flour

● Ghee – Butter or Vegetable Oil

● Dried Red chillies – Chilli Flakes

 

Method

1. Whisk yogurt and gram flour until smooth.

2. Add water, turmeric, chili powder, and salt.

3. Cook on medium heat while stirring continuously.

4. Let it simmer for 10–15 minutes until slightly thick.

5. Prepare tempering by heating ghee with cumin seeds and dried chilies.

6. Pour the tempering over the kadhi and serve hot with steamed rice.
