Food often reflects creativity, changing tastes, and even economics. One such example is caviar, the salt-cured eggs of sturgeon fish that are now considered one of the world’s most luxurious foods.
According to historical accounts, fishermen living near the Caspian Sea regularly caught sturgeon and often preserved their roe with salt so it would not go to waste. At the time, caviar was common and inexpensive because sturgeon were abundant and supply was high. It was eaten as an ordinary food by local communities rather than as a luxury item.
As trade expanded across Europe, merchants introduced caviar to royal courts and wealthy households. People began viewing it as a delicacy, increasing its popularity and demand. Overtime, however, sturgeon became less common due to overfishing and environmental changes. The supply of caviar decreased while demand continued to grow, and its price rose significantly.
Today, caviar is served in fine-dining restaurants around the world and is often associated with wealth and prestige. Its pristine journey from a simple fisherman’s food to a luxury delicacy demonstrates an important economic principle: when a product becomes scarce but remains highly desired, its value increases.
Authentic Recipe: Traditional Caviar on Blinis (Russian Pancakes)
Ingredients
● 30 g caviar
● 8 small blinis or crackers
● 2 tbsp sour cream
● Chopped chives
Substitutes
● Caviar – Salmon roe
● Blinis – Crackers or toast
● Sour cream – Greek yogurt
● Chives – Spring onions
Method
1. Place the blinis or crackers on a plate.
2. Add a small amount of sour cream.
3. Top with a spoonful of caviar.
4. Garnish with chopped chives.
5. Serve immediately.
